Great Granola

Granola - put a spoonful or two on yoghurt or your favourite cereal

Preheat oven to 180C, put baking paper on 2 baking trays
Mix 2 cups rolled oats, 1 cup of combined quinoa, pumpkin seeds, pepitas and chia seeds, handful of any nuts you like,
Add 2 tablespoons of vegetable oil and up to 1/4 of a cup of maple syrup
Bake for 15 minutes turning every 5 minutes
Leave to cool

A little slice of Lemon

No baking! An easy ones fo the kids
1/2 cup sweetened condensed milk
125g melted butter(get an adult to help you)
250g milk arrowroot crushed(put in a sealable bag and crush with a rolling pin)
1 teaspoon grated lemon rind
1 cup coconut

Icing
1 3/4 cups icing sugar
3 tablespoons lemon juice
15g butter
2 tablespoons coconut

Mix melted butter with condensed milk.
Mix in with crushed biscuits, lemon rind and coconut.
Press into a slice tin lined with baking paper
Put in freezer to harden
Mix icing till it is smooth then apply to top of slice. Leave to set.
A great slice to freeze and take out for school lunches.
